Sunday is baking day in our house, and this beauty is the perfect Sunday bake. I got the recipe for this delicious cake from my sister's Italian mother in law, or Nonna as we have all affectionately come to call her, even my kiddos! Most people would break into a sweat when cooking for large numbers but she's the kind of woman who makes a three course meal for twenty seem like no bother at all, and always serves up the most incredible food at family gatherings. We never visite Italy without stopping by "The Nonni's house" and are always guaranteed to leave with a wonderful recipe or two. This apple cake is one of many gorgeous recipes that have been passed down through the women in her family for generations and once you've tasted it you'll know just why!
January is usually synonymous with juice cleanses and detoxes, but honestly why do it to ourselves? If there's one thing that spending lots of time in Italy has taught me, it's that delicious shouldn't mean unhealthy. As long as you're using quality ingredients, the key to staying on a healthy track is more about putting great flavour combinations together than reaching for the juicer! From a super speedy frittata to a show stopping seafood pasta, here are a few of my favourite weekday recipes that are healthy, simple to put together and guaranteed to leave you feeling satisfied.
