The Ultimate Crowd Pleaser - Black Bean Quesadillas

This quesadilla recipe by Leon founder Allegra McEvedy, has become a Sawkins family favourite. It's incredibly tasty but also super quick and easy to make, we're talking 20 minutes from start to finish! Add a bowl of tortilla chips and an avocado salad into the mix and the result is a gorgeous meal that's "naughty" enough to make it a brilliant  (and much cheaper) alternative to ordering in a takeaway.

I have always been an early bird. If I sleep past 7 a.m I genuinely feel like I'm missing out, so it's not surprise really that breakfast is my favourite meal of the day. Unfortunately, trying to get two small humans out the door by 8a.m usually means that all too often my breakfast can consists of their leftovers washed down with some semi warm coffee. Family gatherings at my Mom's house tend to revolve around food. Last month's meet up was no exception... There was a big dessert-shaped gap in the plans for the weekend, so on the Saturday morning, Mom and I got out the recipe books, looking for inspiration. In our previous house my husband and I (o.k mostly my husband), managed to create a pretty impressive vegetable patch... However that was pre kids..or at least pre, school run, after school clubs, homework to be done and friends' birthday parties to be attended kinda kids. We had a lot more time to dedicate to tending vines, lovingly watering courgettes or patiently "chitting" potatoes...(that is actually a thing)! Still, after a house move and a couple of years out of the "grow your own" game (or in it, if that includes "grow your own kids") we have finally been sent a letter securing an allotment plot! It's a big undertaking but we are keeping our expectations realistic...

Desserts don't turn out well for me.  So I pretty much just wimp out every time. I  head to the nearest Tesco, pick up a "Tarte au Citron" from the frozen isle and serve it up on the prettiest plate I can find...In fact I'm pretty sure it was becoming  my signature dessert. That is of course, until I came across this beauty...
